Spaghetti Bolognese

Ingredients
- 1 large brown onion, finely diced
- 4 garlic cloves, minced
- 4-5 skinny carrots, diced
- 5 celery stalks, diced
- 500g beef mince
- 1 cup red wine
- 1 serve beef stock (experiment with 1-1.5tsp Vegimite and 1cup water)
- 800g (big) can of crushed tomatoes
- Pinch oregano
- 3 bay leaves
- 3tbsp of tomato paste
Method
- Add onion (
1), minced garlic (4 cloves) and a couple of teaspoons of oil to a large saucepan set to medium. Cook until soft.
- Add in carrots (
4-5) and celery (5 stalks) and soften.
- Turn up temperature to medium-high and add mince (
500g). Cook until browned.
- Add red wine (
1 cup) and cook off alcohol.
- Add in beef stock (
1 cup), tomatoes (800g), bay leaves (3), oregano (pinch), tomato paste (3tbsp).
- Cook off some liquid, then simmer, covered, for 30mins or until thick.
